Do you know the science behind baking a cake? Baking is a chemical reaction between ingredients. Flour gives the cake its strength and holds all the ingredients together. A fat source or butter is usually included to improve texture and moistness. Egg protein helps to form the structure of the cake by turning liquid(batter) into solid. Egg yolk helps to mix ingredients that normally don’t stay together, like water and oil. Cake turns into golden brown colour when proteins and sugar get heated. When you add baking powder, it creates little bubbles of carbon dioxide which makes the cake light and fluffy.
